We have it all.  NINA specializes in creating a unique twist on popular dishes that people love. By pushing the boundaries in presentation, flavors, and pairings we have created a riff in our little village of Downtown Dunedin, Florida.

Our Story…

NINA is owned by Chef Traci Bryant and Shane Bittaker. It all began with their mutual wanderlust and taste for the uncertain are what drives them every day. Their extensive travels abroad, both mutual and independent, as well as their years behind the line have come to define who they are as gastronomes.
From living on a small goat farm in France learning to make cheese, whole animal butchery in England, extensive coffee training in Australia, wine tasting in Hungary, Italy, and Bavaria. Studying farm to table cookery from the best of the city in Pittsburgh.

Learning patisserie and baking from scratch, teaching ourselves the wonders of fermentation, eating our way across the underbelly of Northern and Southern Thailand, drinking our way through Germany (very important research of course!), to discovering what it means to be a perfect hot dog in Copenhagen.

We have sweat, we have endured, we have eaten, and we have come out with all of our best-kept secrets that we just cannot keep to ourselves.  Food is for sharing, and so are ideas. So why not share what we hold most dear, our idea of food. Won’t you join us?
