The first time kale chips came into my life I was bombarded with so many feelings.  This is kale, one of my beloved greens, transformed into a ‘chip,’ one of my most fleeting desires. It was truly genius to me. I mean, carrot chips seemed obvious. Really, anything that grew below the dirt seemed a worthy candidate.  And then walks in this dark green, crisp, yet wilt-able beauty.. transformed into a crunchy snack.

Dinosaur Kale Chips

1 bunch of dino kale (aka lacinato kale)

1 Tbl nutritional yeast

1 Tbl  hemp seeds

1 Tbl Concious Coconut oil

Preheat oven to 375°

Clean kale and pat dry with a towel or let air dry completely.

Tear leaves from the ribs into large pieces (to your snacking preference).

Toss all ingredients together in a bowl and lay out in an individual layer on a parchment lined bake sheet.

Bake for about 10 mins or until kale has become crispy and starts to golden.

Enjoy at once, or store in a air tight container.
